Sean Sinclair is a chef who trained under some of the finest restaurants in the country—he was a three-Michelin-star sous chef, and he's brought that precision to something simple: the smash burger.
Patty Man just opened its doors at the beginning of April inside Sawmill Market. They're using dry-aged, grass-fed, grass-finished beef from a rancher friend. The seeded potato buns aren't brioche—they're not too sweet. The fries are hand-cut, crinkle-cut, with a house-made seasoning and just a tiny bit of sugar. Everything matters.
Sean grew up in the East Mountains, born and raised in ABQ. He and his heritage company partners are already expanding—locations coming to Park Square in Uptown and Santa Fe.
